I’ve never been tempted to go full-vegan.  I was a vegetarian (a very poor one) for nearly a decade in my college and post college years.  I have not ventured back since, but something about the idea of vegan baking fascinates me.  I mean, how do I create rich buttery taste without butter?  What could possibly substitute for cream cheese in my carrot cake frosting?  I asked and the Post Punk Kitchen answered.

Their Pumpkin Oatmeal Cookies pleased my friend Will (a real live practicing vegan) and they made me very happy too.

On to Mexican Hot Chocolate Snickerdoodles, I say.  A crackle topped chocolate cookie with a spicy cayenne kick and a sugary cinnamon coating?  Yes please.
